Ingredients:
Type of tamarind: Tamarind is the key ingredient and should be purchased carefully. The tamarind I used for this drink is a firm and less ripe and sour variety. Fully ripe sweet tamarind will need very little sugar and extra tartness from lemon juice. So you need to be extra careful when choosing tamarind. Prunes: Prunes are dried berries and there are many varieties. The one I used was soft and used to make biryani. Not thick or meaty.
Sugar: Now if you use sour tamarind, like I did. You need to add a lot of sugar to balance the sourness of the tamarind. But if you use sweet and ripe tamarind, use just less than half the sugar. A taste test is the best way to be sure. Add a little water to the syrup and then taste test.

Black Salt: Black salt helps balance the tamarind pulp as well as replenish the body’s salt lost through sweat in summer.
Additional Option: Ginger and mint will be a great addition to the drink. Mixing this tamarind syrup with soda will make a tamarind soda a delicious drink. You can also add soaked basil seeds if you like.

How to make tamarind-apple syrup?
It takes some time to make Imli Aloo Bukharay Ka Sharbat | Summer Drink tamarind-apple syrup, but the syrup can be stored in the refrigerator for a long time, so it is totally worth the effort. We need the pulp for the recipe with or without the seeds. If using tamarind pods, first peel and remove the pulp from the devine pod. Weigh and use in the recipe below.

Step 1
In a large pot, combine the tamarind pulp, dried prunes, and water. Bring it to a boil first, then cover and simmer on low heat for 10 minutes to soften the pulp.
Step 2
I like to mash it lightly with a potato masher. Although the seeds won’t get mashed, it helps separate the pulp from the seeds. You can also do this by hand if you let it cool.
Step 3
Transfer this mixture to a strainer with a bowl underneath. Scoop out the pulp from it.
Step 4
Transfer the pulp back to the pot. Take the residue in the bowl and add more water. Mix well to remove the remaining pulp.

Step 5
Place the strainer over the pot and strain again to remove the remaining pulp.
Step 6
In a pot, mix sugar, cumin, black pepper and bring to a boil. Let the sugar melt completely.
Step 7
Let the syrup cool completely then pour into bottles using a funnel. Refrigerate for up to 2 months.
To make the syrup, pour the syrup and ice into a jug. Then add water as required. Taste and adjust as needed. Serve the tamarind aloo Imli Aloo Bukharay Ka Sharbat | Summer Drink syrup chilled with ice.

Imli Aloo Bukharay Ka Sharbat Ingredients
- 125 gram (4.5 oz) tamarind pulp with seeds, see notes
- 125 grams (4.5 oz) prunes3 cups water, divided
- 1 teaspoon cumin powder
- 1.5 teaspoon black salt , or any salt
- 1-3 cups sugar, 3 cup for sour tamarind or 1 cup sugar if using sweet tamarind, see notes
Instructions
- In a large pot, take the tamarind pulp, dried prunes and 2 cups of water.
- First bring it to a boil then cover and simmer on low heat for 10 minutes.
- Mash the mixture with a potato masher to separate the pulp from the seeds. Protip: If you let this mixture cool, you can also mash it with your hands.
- Strain the mixture through a coarse sieve to remove the pulp from it.
- Transfer the remaining seeds to a bowl and add 1 cup of water. Mix well to dissolve the remaining pulp. Strain again and discard the seeds.
- Transfer the extracted pulp back to the pot and add sugar, cumin seeds, black salt. Bring it to a boil and simmer until the sugar dissolves completely. Remove from heat and let it cool. Protip: If unsure, start with less sugar. Add a little water to the prepared syrup to test the taste and adjust as needed.
- Now pour the syrup into bottles with the help of a funnel. Store in the refrigerator for up to 2 months.
- To make the syrup, add the syrup and ice in a jug. Then add water as needed. Test the taste and adjust as needed. Serve chilled with ice.
Notes
Tamarind comes in many forms, such as in pods, seedless pulp blocks, or pulp blocks with seeds. If replacing the seedless pulp, use only 75 grams.
Sugar: The amount of sugar will vary according to the variety of tamarind used. Ripe brown and thick pods yield sweet tamarind. Greenish brown pods contain unripe sour tamarind. You can taste to know which variety you have. While sweet tamarind can be eaten raw, sour tamarind is too tart to be eaten as a fruit.
Fresh ginger and mint will be a great addition to drinks.
Mixing this tamarind syrup with soda and water will make a delicious tamarind soda drink.
You can also add soaked basil seeds if you like.
