Aam Panna is a South Asian drink made from raw or unripe green mangoes to cool the body in summer. It has a balanced sweet and sour taste with a hint of cumin and black salt.

You can add many common Indian spices to this drink, from cardamom to ginger, jaggery, and a little red chili powder.

If your raw Refreshing Raw mango Drink are too hard and too sour, you can add ½ bottle of bitter gourd to this drink to make it sweeter and less tangy. Simply boil the bitter gourd with the green mangoes. Moreover, bitter gourd also helps in cooling down the body heat.

How to make mango panna?

  1. Wash the raw green mangoes (cari).
  2. Peel it with a knife or peeler.
  3. Cut out the seeded flesh. And cut the flesh into pieces.
  4. Boil the raw mango flesh in 2 cups of water for 7 minutes. Cover with a lid.
  5. The raw mangoes are now soft. Add sugar, cumin, black salt, and black pepper.
  6. Add 2 more cups of cold water to cool the mixture and let it cool completely. Transfer the mixture to a food processor.
  7. Add mint. Blend for 2 minutes until smooth.
  8. Strain the mixture to remove solid particles. (But this straining step is optional.)
  9. Mango Panna, Curry Sherbet, or Raw Green Mango Juice Concentrate is ready.
  10. To make the syrup, fill ¼ glass with concentrate. Add 2 ice cubes. Fill the rest of the glass with cold water. Mix well and serve.

Ingredients

  • 4 (500 grams) raw green Mango , (keri)
  • 4 cups water, divided
  • 1¼ cup sugar, sub with jaggery or brown sugar
  • 1½ teaspoon cumin seeds, roasted
  • ¼ teaspoon black pepper
  • 1 teaspoon black salt
  • 2 fist full mint leaves

Instructions

  1. Wash and peel the raw mango. Remove the seeds from the pulp. Cut the pulp into pieces.
  2. Simmer the pulp in 2 cups of water for 7 to 10 minutes until soft, cover.
  3. Once soft, add 2 cups of cold water to cool the mixture. Then add sugar, black pepper, roasted cumin seeds and black salt. Mix well and let it cool completely.
  4. Transfer the raw mango mixture to a food processor, add mint leaves and blend into a smooth pulp.
  5. Transfer the pulp to a large bowl and strain the liquid through a coarse strainer.
  6. Your syrup concentrate is ready. It can be stored in the refrigerator for 2-3 days. You can also freeze it.

To make the syrup

Fill ¼ glass with concentrate. Add two ice cubes and fill the rest of the glass with water. Mix well. Serve with additional ground black pepper and black salt.
