Introduction

During my childhood, saffron milk was a must for exams. On other days, we would get Horlicks, Rooh Afza, or Cadbury chocolate milk, whichever we liked. It was only during exams, after a full day of studying, that my mother would feed us this milk.

What a beautiful memory that is still as vivid in my eyes as yesterday. I was very blessed to enjoy the love of my grandparents and great-grandparents till my 20s. I don’t remember doing anything like that for my children’s exams. The pressure of exams seems to be more on me than the children.

During pregnancy, when mood swings and fatigue can really get you down. This milk can help lift your mood. (Avoid saffron and other hot foods in the first trimester.)

How to make it?

I crushed the extra nuts beforehand. And you can use cashews or any nuts you have on hand besides peanuts.

Step 1

Okay, these are powdered nuts but authentic harira needs crushed nuts as I mentioned in the recipe card. You get the taste of the nutty bits while drinking the harira.

Heat the butter and add the crushed nuts. Fry for a few seconds.

Step 2

Add milk, sugar and saffron.

Step 3

Add cardamom powder and bring to a boil. Then boil the milk on medium heat for 5 minutes.

The saffron milk is ready to serve.

Saffron Milk Recipe

  • 2¼ cups milk
  • 1 teaspoon butter
  • 1 tablespoon almond, crushed
  • 1 tablespoon pistachio, crushed
  • ¼ teaspoon cardamom powder, optional
  • 2 tablespoon sugar , or to taste
  • 8-10 strands saffron, good quality

Instructions

  1. Heat the butter in a heavy pan on low heat and fry the nuts for a few seconds.
  2. Add the milk, sugar, saffron, sugar and leave the milk to boil. Then boil for 5 minutes on medium heat.
  3. The harira is ready.

Notes

Tips: You can also use other nuts like cashews. You can also add additional nuts if you like. You can crush almonds and pistachios together and use a small container every day. This makes it really easy.
